Greek Olives
The Fruit of the Olive tree, often 2 main Greek varieties Halkadiki & Kalamata are used for eating whereas the Koroneiki Olive is used predominantly for oil production. All Olives start off Green, some are picked when they are green others are allowed to ripen from green to reddish brown to purple and on to black. The olives are harvested between October and January each year, the black olives are harvested later than the green and are therefore riper.
Greek Olives are mainly 2 types Halkadiki Green and Kalamata Black
Green Olives tend to be firmer and meatier than the black olives
Black olives tend to be a lot sweeter
